Vidiano is an ancient Cretan grape varietal that was spiraling towards extinction, but is now a rising star. The wine shines more so texturally than aromatically, and is quite the treat. Aged in stainless steel for a dry, fresh wine, that is so classically Greece. Pair it with fried fish tacos with a mango pineapple slaw.
